- 150 g of organic vegetable peelings (carrots, zucchini etc...)
- 350 g of cooked quinoa (or 150 g if raw)
- 3 eggs
- 2 green stems of spring onions
- 100 g of Feta cheese, crumbled
- 4 tbsp of breadcrumbs
- 2 tbsp of flour
- Olive oil
Clean the peelings and chop them coarsely.
In a bowl, mix all the ingredients.
Heat a frying pan over medium heat and pour in 2 tablespoons of olive oil.
Place a large tablespoonful of the mixture in the hot pan and flatten it with a spatula.
Cook the patty for 3 to 4 minutes, turn it over gently with the spatula and cook it again for 3 to 4 minutes.
Place the patties in the MB Original bento box and serve with green salad and fruit for dessert.
