Ingredients
For the crispy chickpeas and mini cheese skewers:
- 200 g of canned chickpeas, rinsed and drained
- 2 tsp of olive oil
- ¼ tsp of salt
- 1 tsp of your favorite spice mix (e.g. gyros spice mix)
- 45 g of Swiss cheese, cubed
- 6 pickles baby dill, cut in half
- 6 cherry tomatoes, cut in half
- 12 black or green olives
- 12 mini wooden skewers
For the Blue cheese dipping sauce:
- 1 tbsp of Mayo
- 1 tbsp of sour cream
- 1 tbsp of crumbled blue cheese
- Salt
- Pepper
For the Buffalo cauliflower wings:
- 200 g of cauliflower florets
- 40 g of plain flour
- 80 ml of soy milk
- ½ tsp of garlic powder
- ¾ tsp of paprika powder
- ¼ tsp of salt
- ¼ tsp of black pepper
- 120 ml of Buffalo sauce or your favorite hot sauce
- For serving: celery and carrots sticks
Instructions
For the crispy chickpeas and mini cheese skewers:
Preheat the oven to 170°C.
Dry the chickpeas.
In a bowl, mix the olive oil, salt and spice mix. Add the chickpeas and toss well to coat evenly.
Transfer the chickpeas to a baking tray and bake for 30 minutes or until they become crispy. Let cool before placing them in the first container of your MB Square bento box.
Thread the ingredients onto skewers, in the desired order, and place them with the chickpeas.
For the Blue cheese dipping sauce:
In a bowl, mix the mayonnaise, the sour cream and the Blue cheese using a spoon or a blender and pour it into the MB Temple M sauce container.
For the Buffalo cauliflower wings:
Preheat the oven to 200°C.
Cover the baking tray with a baking mat.
In a large bowl, beat the flour, soy milk, garlic, paprika powder, salt and pepper until obtaining a smooth batter. Add the cauliflower florets into the bowl and toss to coat them evenly.
Spread the cauliflower florets on the baking tray and bake for 20-30 minutes, flipping them over halfway through. Transfer the cauliflower from the oven to a large bowl and pour hot sauce over it. Using a spatula, toss to coat the florets evenly, on all sides. Place the cauliflower back in the oven and bake for 10-15 minutes.
Let them cool before putting them into the second container of your MB Square bento box. To finish, add some celery and carrot sticks and the blue cheese dipping sauce to your lunch box.
Malwina's tip: Buffalo cauliflower wings taste even better when they are hot – just a few seconds in the microwave before eating them and there you go!
