We made the suggestion to use bento boxes for the Queen’s Platinium Jubilee.
Here is a « royal » menu to compliment this event: duck breast with blue cheese sauce. Evidently the menu sounds quite French so we’re not sure the Queen will give her approval.
Ingredients:
– 1 duck breast
– 10g of flour
– 12g of butter
– 15 cl of milk
– salt and pepper
– approx. 60g of blue cheese
Start by melting the butter in a pot on low heat. Slowly add the flour while stirring.
Slowly pour in the milk and add the blue cheese broken into small pieces. Keep stirring until it thickens. Be careful not to make it too thick. Put the sauce in a disposable food box.
Use a sharp knife to score the fatty side of the duck breast in a diagonal cross-hatch without cutting into the flesh. Fry quickly the fatty side letting it cook for 6 minutes and 3 minutes on the other side.
