Ingredients
- ½ eggplant
- ½ zucchini
- 1 yellow onion
- 150 g of cherry tomatoes
- ½ tsp of garlic powder
- 1 pinch of thyme
- 1 pinch of oregano
- 3 tbsp of olive oil
- Salt and pepper
- 1 handful of grated halloumi
- 300 g of pasta
Instructions
Preheat the oven to 190°C. Dice the eggplant, zucchini and onion. Place them on a baking sheet covered with baking mat with the whole cherry tomatoes. Add the thyme, oregano, garlic, salt, pepper and oil and mix well. Spread the vegetables evenly on the baking sheet and bake at half height for 25 minutes. Meanwhile, cook the pasta in a large pot of boiling water. When the vegetables are cooked, place the pasta and vegetables in the MB Element bento box and sprinkle with grated halloumi.
