Ingredients
For the sushi bowl:
- 50 g of sushi rice
- 1 tbsp of rice vinegar
- 1 tsp of sugar
- A pinch of salt
- 30 g of smoked salmon, sliced
- 1 small ripe avocado, peeled and sliced
- 1 tsp of lemon juice
- 50 g of carrots, peeled and cut into julienne strips
- 30 g of red cabbage, shredded
- 30 g of cooked green peas
- 1 green onion, chopped
- 1 tsp of furikake rice seasoning
- Some Japanese soy sauce to drizzle
For the chocolate brownie cookies (about 20 cookies):
- 50 g of dark chocolate, coarsely chopped
- 50 g of butter, cubed
- A pinch of salt
- 100 g of superfine sugar
- 1 egg, at room temperature
- 80 g of plain flour, sifted
Instructions
For the sushi bowl:
Cook the rice according to the package instructions.
In a large bowl, gently mix the rice with rice vinegar, sugar and a pinch of salt. Cover the bowl with a clean kitchen towel and set aside to let cool.
Drizzle the avocado slices with lemon juice to keep it fresh and green.
Place the cooled rice in the first container of the MB Square bento box, add the salmon and vegetables on top and sprinkle with the green onion and the furikake rice seasoning.
Pour some soy sauce into the MB Temple S sauce cup and drizzle it over the dish before eating.
For the cookies:
Preheat the oven to 180°C.
In a bowl, melt the chocolate and butter in a double boiler. Set aside to let cool slightly.
In a large bowl, using a hand mixer, mix the melted butter and chocolate, a pinch of salt and superfine sugar. Add the egg and beat for 2 minutes. Then, add the flour and mix until all the ingredients are well combined, and the dough is formed.
Wrap the dough and leave in the refrigerator for 3 hours.
Shape 20 small balls of dough and place them at least 3 cm apart on a baking tray, covered with a baking mat.
Bake in the middle of the oven for about 10 to 12 minutes, until the edges of cookies are firm to the touch.
Remove the cookies from the oven and let them cool down before placing them in the food cup of the second compartment of the MB Square bento box.
Serve with some seasonal fruit.
