Ingredients
Ingredients for 1kg:
700ml (325g) rolled oats
300ml (190g) white sesame seed, hulled or whole
100ml (70g) flax seed
200ml (75g) desiccated coconut
100ml (170g) nuts and/or seeds of your choice, whole or roughly chopped
50ml (55g) coconut palm sugar*
50ml (40g) extra virgin olive oil
50ml (60g) rice malt syrup**
1/4-1/2 tsp sea salt
*coconut palm sugar can be replaced with brown sugar, just use less.
**rice malt syrup can be replaced with any other natural syrup like maple, coconut palm, agave or even regular golden syrup. If using agave or golden syrup, use less as they’re very sweet.
Instructions
1. Preheat your oven to 150ºC.
2. Add all ingredients to a large mixing bowl.
3. Stir thoroughly then tip the mixture into a big oven tray, spreading it evenly.
4. Bake for 40 minutes, stirring every 10-15 minutes to stop it from burning.
5. Once time is up, stir a final time and leave the granola in the oven to cool with the door slightly open, for ultimate crispness.
6. Store in an airtight container at room temperature for up to a month.
TIP: If you use digital scales, place the bowl on the scales and set to zero. Add each ingredient, resetting to zero after each measure. You will breeze through the list in no time!
