Yakitoris recipes (different versions)
It’s been quite a while since we last spoke about Japanese cooking and tasty little dishes.
So let me share with you one of my favourite Japanese dish : Yakitoris !
Yakitoris are brochettes (kebabs). They can be made with chicken, beef, salmon, octopus, rice or even with pork and cheese…
However, these brochettes were probably originally made with chicken as Yakitori stands for “grilled fowl”.
Here is a selection of the most common Yakitoris (cf.Wikipedia) :
- yotsumi (四つ身) – chicken breast
- atsuage tofu (厚揚げとうふ) – deep-fried tofu
- enoki maki (エノキ巻き) – enoki mushrooms wrapped in slices of pork
- pīman (ピーマン) – green pepper
- negima (ねぎ間) – green onions and chicken breast
- nankotsu (軟骨) – chicken cartilage
- rebā (レバー) – liver
- tsukune (つくね) – chicken meatballs
- torikawa (とりかわ) – chicken skin, grilled until crispy
- tebasaki (手羽先) – chicken wing
- asupara bēkon (アスパラベーコン) – asparagus wrapped in bacon
- butabara (豚ばら) – pork belly
The most important is to be creative and adapt the recipes to your favourite foods. Here are a selection of basic recipes :

Serves 3-4
Ingredients :
- 500g skinned salmon fillets
- 2 tablespoons fish sauce
- 3 tablespoons lime juice
- 3 tablespoons soy sauce
- 2 teaspoons brown sugar (optional)
Method :
Dice the salmon into 2 cm cubes.
Mix all the remaining ingredients, add the salmon pieces and mix once more.
Leave to marinate in the fridge for 1/2 h. Then, put the fish onto bamboo skewers and (on the barbecue, a plancha, the grill, a special grilling pan) grill all sides seasoning them regularly with the marinade.
Beef and cheese Yakitori recipe :
Serves 2
Ingredient :
- 20 beef carpaccio slices
- 200 g diced gouda cheese (for about 60 dice)
For the marinade:
- 2 tablespoons teriyaki kikkoman sauce
- 2 tablespoons soy sauce
- 1 tablespoon honey
- The juice of 1 lime
- 2 tablespoons Chinese vinegar ( rice-based vinegar)
- ground pepper
Method :
For each skewer – on two slices of carpaccio arrange 6 cheese dice in the middle.
Fold the carpaccio over the cheese in order to cover it completely (like a sausage roll) then skewer the rolls on a 15 cm wooden stick.
Mix all the ingredients for the marinade in a flat dish and display the brochettes. Leave to marinate for at least 2 hours.
Cook on grill.
Sake chicken meatballs recipe :
Serves 4
Ingredients :
For the meatballs :
- 400 g chicken breast
- 1 teaspoon ginger powder (optional)
- 1 small onion
- 1 tablespoon sake
- 1 egg white
- Flour
- Sesame oil
For the sauce :
- 2 tablespoons soy sauce
- 2 tablespoons sake
- 2 tablespoons golden caster sugar
- 2 teaspoons cornflour
Method :
Chop the chicken breast (into small pieces). Then blend the chicken, the onion, the ginger, the Sake and the egg white.
Shape the mixture into meatballs by rolling a small amount of it in the flour.
In a saucepan, make the sauce by bringing to the boil the soy sauce, the Sake, the sugar and the cornflour.
Stick 2 or 3 meatballs on each skewer.
In a frying pan, brown the meatballs nicely in a little sesame oil.
Season with Sake sauce.
Serve.
You’ll surely have understood by now that the secret to a delicious Yakitori lies in the sauce! – and it tastes even better if you marinate the meat. If you’re not a great cook, or if you don’t have much time, no problem, you can buy ready-made sauces !
And now especially for you, here’s an extra delicious sauce recipe for Yakitoris.
For one bowl :
- 75 ml mirin
- 25 ml soy sauce
- 2 tablespoons honey
Bring to the boil the mira/honey mixture.
Add the soy sauce and reduce by cooking gently for 10 min.
