Today, I decided to make a nice salad that really tastes like summer. The ingredients that I used don’t usually go together but it was nice. The different flavors were quite enjoyable, crispy and smooth at the same time. Why not try it!
Ingredients:
For the shrimp marinade:
– a handful of shrimp
– cilantro
– parsley
– garlic
– lemon juice
– olive oil
– sea salt
For the veggies:
– ¼ zucchini
– ¼ red sweet pepper
– olive oil
– salt
For the salad:
– some arugula/rocket
– salad dressing
Peel the shrimp and put them in a bowl. Thinly slice the cilantro and parsley. Cut the ginger. Crush some garlic. Add a tablespoon olive oil and another of lemon juice. Mix everything and let it sit aside.
Thinly cut the zucchini and red pepper. Cook them a few minutes in a pan. They have to stay crunchy. Add salt and pepper. Let it cool down.
Wash the arugula/rocket.
Cook the shrimp mix. Add salt and pepper. Let it cool down.
Take your favorite dressing or some balsamic vinegar in a sauce cup.
Put everything together in your bento box. Add some extra salt or pepper if necessary.
