You probably think when it is hot outside, you don’t want nor need to eat that much.
But when you start at 8 or 9 in the morning, you’re hungry at lunch time.
Even if a small salad seems to be enough when you wake up at 10 and go for nap on the beach a few hours after a small, it’s enjoyable to have a small salty muffin for lunch.
The surprise is that those « muffins » are yoghurt cakes. The simplest and fastest recipe ever ! Do it the day before when you go to work or in the morning when you’re on holidays.
Yogurt salty cakes : ham, goat cheese and honey !
Ingredients :
- ½ cup yogurt
- ¼ cup olive oil
- 3 eggs
- 1 ½ cup flour
- 1 tsp baking powder
- salt
- 200g goat cheese
- 120-150g ham
- Acacia honey
Recipe :
Turn on your oven at 180°C or 356°F.
Mix yogurt, olive oil and eggs. Add flour and baking powder.
Remove the goat cheese’s skin and cut it in small pieces.
Cut the ham in thin pieces.
Add ham and cheese to the mix.
Put the cake cases ni the mold and fill half of it with the mix. Put a spoon of acacia honey and fill the rest with the mix.
Put it 10 minutes in the oven.
And tada! Delicious muffins are waiting for lunch time!
Good with a green salad and tomato. Fresh and tasty! Pandas just started dancing !
