For my second recipe with monbento mold, I made a goat cheese and olive cake.

The cake tends to rise and expand in the oven, which makes it too thick and high to fit in the MB Original. If you prefer to make one big cake you can cut it into slices and take a few with you.

If you want to carry your whole cake, you should make two smaller ones. They would fit in the two compartments of your bento box.

 

Ingredients:

-125g of flour (4.4 oz)

-2 eggs

-1 tsp of baking powder

-4 Tsp of olive oil

-4 Tsp of milk

-1 pinch of salt

-pepper

-70g of goat cheese (2.5 oz)

-50g of green olives (1.8 oz)

 

Preheat the oven to 350°F – 180°C.

Mix the eggs and milk. Mix the baking powder and flour. Add the solid to the liquid mix. Add pepper and salt. Cut the olives and goat cheese in small pieces. Add them to the mix. Blend everything and pour into 1 or 2 parts of the monbento mold.

Bake for approximately 35 minutes.
