Ginger

A few weeks ago Christophe started telling everyday about ginger miracles. Every day he explains us why we should eat ginger.

 

Most of the times ginger helps being cheerful or dynamic. Last week-end, ginger was perfect against tiredness.

 

Ginger is known for being an aphrodisiac but it has much more qualities.  It is very good against migraine, it has a lot of antioxidant (good against ageing and helps prevent cancer) and it is really good for digestion.

 

Ginger is also very pleasant for different kinds of cooking. It has different forms for different purposes: powder, fresh, candied and pickled. There’s different ways to consume it.

 

When it is fresh, I like to put it in a cup of hot water with honey. It is perfect against cold during winter. You should choose it young and smooth so it is not stringy. It is better not to keep it refrigerated.  
You can freeze it once grated.

 

Ginger powder is perfect of savoury seasoning in different kinds of dishes.

 

Ginger pickle is used to separate tastes between sushis.

 

Candied ginger is delicious in the date and ginger cake. It’s my favorite ever.

 

Christophe cooked 3 gingers with chicken.

 

You need for 2 persons:

2 pieces of chicken
2 pieces of candied ginger
2 table spoons of ginger powder
1 bouillon cube
1 small container of crème fraiche
oil
salt, pepper, nutmeg

 

Cut the candied ginger and fry it with some oil. When it is brown add chicken cut into pieces with pepper and salt. Add the fresh ginger a few minutes after.

 

Once the chicken pieces are cooked add the crème fraiche, ginger powder, bouillon cube crumbled and some nutmeg. Let the sauce reduce during 5 or 10 minutes. Taste and add ginger powder if needed.
