The weekend of the 8th and 9th of September was supposed to be the sunniest and hottest. Unfortunately, we all were working at the Maison et Objet trade show and looking for new retailers.
So for us, this weekend, spent in our air-conditioned stand, felt like perfect weather to bake cookies. We took advantage of the situation and made ginger and oat meals cookies. Then we went with friends for a cup of tea while eating all of cookies.
Ingredients:
– 100g butter
– 1 Tbsp honey
– 1 tsp baking powder
– 2 tsp fresh grated ginger
– 2 Tbsp crystallized ginger cut into small pieces
– 100g powdered sugar
– 100g flour
– 125g oats
Prepare all the ingredients.
Melt the butter with the honey in a pan or in the microwave. Stir and add the baking powder and both types of ginger. Finally add sugar and mix well.
Add flour and then oats until the batter is smooth.
The dough will have a grainy consistency. Take tablespoons of dough roll it into balls. Flatten them and place them evenly along a well-greased baking sheet. Bake in the oven at 180°C-350°degrees for 7-8 minutes. Take them out when they are slightly browned on the top.
It tastes perfect with a rose black tea.
