Using a bento box is a good solution for vegetarians.
They often have some difficulties to find everyday a cheap and healthy meal.
Lili shares with us a salty cookies recipe : parmesan, thyme and fig. Good with a salad or some veggies like in Lili’s bento.
For approximately 10 cookies :
200g flour
50g olive oil
1 tsp baking powder
1 egg
1/2 greek yogurt
30 to 40g parmesan cheese
3 dried figs
1 tsp thyme
pepper
Mix flour, baking powder, thyme and pepper.
Add olive oil, the egg and then a table spoon of greek yogurt, mix after adding each ingredient.
Cut the parmesan in small cubes and figs in small pieces.
Mix by hand so there’s pieces of parmesan and figs everywhere.
Make small balls, flaten them a bit with your hands.
Cook them 20 minutes in the oven, 200°C.
