
Ingredients
For two portions in the Square lunch box:
- 150 g pasta
- 1 generous tablespoon of pesto
- 1 zucchini
- A splash of lemon juice
- Olive oil
- Salt and pepper
- 2 handfuls of arugula
- 6 strawberries (about 3 per lunch box)
- 1 burrata
- Toasted almonds
Instructions
- Cook the pasta according to the package instructions. Drain and mix with a generous spoonful of pesto while still warm.
- Using a vegetable peeler, create thin ribbons of zucchini. Add a splash of lemon juice, a drizzle of olive oil, salt, and pepper. Mix well.
- Divide the pasta, then the zucchini, between the two containers of your Square lunch box.
- In each container, add:
- A handful of arugula
- 4 strawberry quarters
- Half a burrata
- Finish with a sprinkle of toasted almonds, a drizzle of olive oil, and a pinch of salt and pepper.
