Ingredients
- 100 g chicken
- 1 small onion
- 4-5 broccoli florets
- 1 tablespoon peanut butter
- 1 teaspoon grated ginger
- 2 tablespoons soy sauce
- 2 large glasses of water
- 100 g rice noodles
Instructions
- Heat a pan over medium heat and sauté the diced chicken with the chopped onion until they start to brown.
- Add the broccoli, ginger, soy sauce, and peanut butter. Stir well and let cook for 2 to 3 minutes to enhance the flavors.
- Pour in the water and bring to a boil. Let simmer for 3 to 4 minutes so the broccoli starts to soften.
- Add the rice noodles and cook for a few more minutes, stirring regularly until they absorb the broth and soften.
- Serve immediately or let cool before transferring to your Square lunch box for a delicious meal on the go.
