200 g of fresh salmon (you can also choose frozen salmon)
3 eggs
About 20 green peppercorns

2 teaspoons of tomato concentrate
A dice of butter for the mould
Salt and pepper

For the water bath, put some water on the bottom of a baking dish. Put the mould inside. Be careful: water does not enter the mould.

Claudine’s suggestions:
- Taste this dish when it is quite cold with cherry tomatoes and prawns;
- To decorate and put a pinch of freshness, add lemon slices and a bit of tossed salad;
- Serve with a mousseline mayonnaise sauce.
Claudine’s tip:
If you have some tomato concentrate left, add a thin film of oil on the top. You will keep it fresh for a few days in the fridge!
Bon appétit!
