Ingredients
Salmon nuggets:
1 salmon steak (200 g) - 1 egg beaten with a pinch of salt - 100 g unsweetened cornflakes (or breadcrumbs) - 2 Tbsp. corn starch
Light veggie crisps:
Coloured carrots (orange, purple, white and yellow) – potatoes (yellow and vitelotte) - salt
Homemade ketchup
1 kg / 2.2 lb of very ripe tomatoes
1 red onion
1 garlic clove
1 tablespoon olive oil
7 cl balsamic vinegar
1 teaspoon sugar
10 g salt
1 teaspoon mixture of spices ( 4 spice type mix)
A few drops of Tabasco
Instructions
Salmon nuggets:
Cut the salmon in slices 1 cm thick. Roll them in the corn starch, then in the egg mixture. Crush the cornflakes and roll the salmon in them. Line a grill with waxed paper and place the fish on it. Cook in the oven preheated to 250°C for 3-4 minutes.
And there you have a fishy, oil-free version of the much-loved nugget!
Light veggie crisps:
Peel, wash and slice the vegetables thinly. Lay on a plate covered with plastic wrap. Cover with a second sheet of plastic wrap and pierce the plastic with the tip of a knife. Microwave for 4-5 minutes at maximum power. Repeat until the vegetables are crispy. Sprinkle with salt, herbs or spices if you like.

Homemade ketchup:
Peel and chop the onion, crush the garlic
After washing and removing the stalk, cut up the tomatoes in big chunks.
In a sauce pan, sweat the chopped onion and crushed garlic with the olive oil. Add the tomatoes, sugar, salt and spices. Let simmer uncovered for about 30 minutes.
Strain the mixture through a sieve and using a spoon, remove all the seeds.
Pour back in the sauce pan, add the vinegar and let cook for another 30 minutes on very low heat. Add a few drops of Tabasco.
The texture must be creamy and slightly syrupy. Leave to cool (you may keep your ketchup up to 12 days in the fridge).
The plus of homemade ketchup, on top of the "DIY" gratification, is you can adjust the recipe to your taste : add in more spice, less sugar, less salt, more pepper ... In short: have it spicy and strong for the parents, salty-sweet for the teens and just plain for the little ones.
