Ingredients
Fresh Cantal cheese
Green lettuce or mixed leaf lettuce
Vinaigrette
Chervil
Salt, pepper
Instructions
Cut the Cantal into small cubes.
Wash the lettuce and season with the vinaigrette.
Top with the Cantal cubes and serve.
Suggestions:
- Use aromatic vinaigrettes and adapt to the variety of Cantal: fresh Cantal with raspberry or tarragon vinaigrette with raspberry or tarragon vinegars, aged Cantal Entre-Deux with hazelnut vinaigrette and chopped hazelnuts, aged Cantal with walnut or sesame vinaigrette with walnut or sesame oil.
- Add golden croutons the same size as the Cantal cubes.
