Ingredients
1 Tbsp rolled oats
1 Tbsp corn flakes
1 Tbsp puffed rice
1 Tbsp sugar
1 kiwi
½ red apple
½ pita haya (dragon fruit)
¼ pineapple
1 ripe mango
1 glass of freshly squeezed orange juice
1 tsp honey
1 Tbsp coconut milk
Dried fruit
Option: fresh coconut
Instructions
Muesli always contains fresh fruit: fruit like mango or banana gives it smoothness, tart fruits like passion fruit or citrus play an antioxidant role with respect to other fruits, and dried fruit and/or nuts provide energy.
This recipe can be adapted to any season and any whim.
Mix the mango with the freshly squeezed orange juice (for the vitamins). For an even tastier treat, add a dash of coconut milk and honey.
Peel (or not) the other fruits and chop into evenly sized pieces.
Roast the grains slightly in a non-stick frying pan with a touch of sugar or caramelise them in the oven on the grill setting.
Once they have cooled, add any kind of dried fruit: we have added dried raspberries, bananas, cranberries and golden raisins.
Add a bit of grated fresh coconut to go with the coconut milk.
For a “Bircher muesli” variation, replace the mango juice with yoghurt, soft white cheese or cream.
This preparation is ideal for breakfast, and will keep you energised all morning!
